Last night we kept it simple. We had some leftover veggies in the fridge, we had some mixed greens, and we had some goat cheese. I sliced a red pepper, and the beet into similarly sized pieces, and cut up some leftover broccoli. Lay them out evenly on a baking sheet and cover them in olive oil, salt and pepper. I put some balsamic only on the beets though to give them a little sweetness. Roast for 45 minutes at 350. Serve warm over mixed greens, and top with goat cheese, alongside some pearled couscous.
